St Patrick's Cookies!

In these uncertain times, we need warmth, colors, and yummy cookies !

Cooking time: +/- 45 min
200 g of ice sugar
1 egg white
1/2 lemon juice
Start by whisking the egg with the sugar. Add the lemon juice and stir until the mixture becomes creamy and white.
Depending on the colors wished: add drops by drops the food coloring in the dough.
Reserve this mixture for the biscuits. Use your pastry bag if you have one. It will help you with the decoration of your biscuits.
110 g of sugar
1 sachet vanilla sugar
250 g of flour
125 g of butter
1 pinch of cinnamon
Break the egg in a bowl. Add a pinch of salt, the sugar and the sachet of vanilla sugar. Beat the mixture to whiten it. Pour the flour and use your hands to mix up the dough. You should obtain a paste that looks like thick sand.
Add the butter and knead until the dough holds together (it should neither be too soft nor too hard). Leave the mixture to rest 10 minutes in the fridge (you can use this time to start the topping).
Heat the oven up to 180°C (thermostat 6). Sprinkle a little flour on your work surface and roll out the disk of the dough to 5mm thickness.
Use your St Patrick molds if you have some. For those who don't, no panic, you can easily find clovers, hats, beer mugs on the internet. Print them on an A4 sheet, cut them out, and place them on your bits of pastry. Use a knife to chop off the surplus dough and its done, so easy!
Put your cookies on a buttered baking tray (or on a baking sheet if you prefer).
Place the cookies in the oven for +/- 20 min (depending on your oven's rating). Once baked, decorate your biscuits and enjoy them!
