F4A’S WARM & POWERFUL QUINOA SALAD
The weather is changing from cold to warm so we thought some powerful food is needed this week. Quinoa is such an easy one to cook and match with so many ingredients, so F4A took all the leftover vegetables in the fridge and came up with this gorgeous, powerful quinoa salad! The plus of this recipe is that you can enjoy this meal warm or cold!

Yield: 4 servings
Preparation time: 45 minutes
Cooking time: 30 minutes
Ingredients:
Olive Oil + Spicy if you have
1 teaspoon of chili powder
3 big garlic cloves
2 medium shallots
1 Broccoli (300gr)
150gr brown mushrooms
Half of a red bell pepper
1 small can of mixed carrots and peas
ALL CHOPPED
IN THE OIL IN THE ORDER ENUMERATED (veg all together)
Then left to medium cook for about 20 minutes
WITH:
Half of the lime pressed juice directly in the veg wok
1 teaspoon of coriander powder
1 teaspoon of cumin powder
1 teaspoon of basil salt
1 teaspoon of mixed dried herbs (thyme, basil, oregano)
Pepper of all kinds
150gr of coral lentils
125grams of quinoa
Preparation:
Start by washing your vegetables.
First, chop the garlic cloves and the shallots.
Add them in a wok with some hot olive oil and chili powder. Leave for about 5 minutes.
Then add the chopped vegetables and spices. Leave to cook with the lit on the wok for about 10-15 minutes at medium temperature and don’t forget to stir from time to time.
While the vegetables are cooking in the wok, on the side cook the coral lentils and the quinoa in boiling water for about 15minutes for each 150grams.
When serving, make a mountain of quinoa and lentils mixed.
Arrose with soy sauce.
Decorate with the vegetables and spice more to taste.
Enjoy warm or cold as a salad!
