Hot or Cold Bean Soup with Poached Egg
Preparation time: 15 min Cooking time: 30min Serves: 4 people
500gr of green beans 500gr of flat beans 1 medium potato 1 bunch of chives
1 cube of vegetable stock 2 tablespoons of olive oil 4 eggs 20cl of UHT liquid cream (12%)
Soup preparation :
Cook your beans in a large pot of boiling water and add the vegetable stock cube.
Drain the beans keeping the equivalent of 2 ladles of broth.
Mix everything together and add the chopped chives and the liquid cream.
Blend again until you obtain a creamy and smooth soup.
Season according to your tastes.
Poached eggs preparation:
Use a small glass or a terracotta container that can withstand the heat of cooking in a bain-marie.
Oil the container and break an egg in it.
Add salt, pepper, chives, and olive oil.
Put the container (with the egg inside) in a frying pan filled with water.
Leave your egg to cook over low heat. Once cooked (the yolk must remain runny), remove it from the container by peeling off the sides with a knife.
Place the soup (or gazpacho) in a soup plate and place the poached egg gently in the center. Add a drizzle of olive oil and balsamic cream. Season with salt and pepper and serve!
