Nettle and Goat Pie

Preparation time: 15 min

Cooking time: 30 min

Serves: 6 persons

Ingredients: 5 handful of nettle Fresh goat cheese 1 shortcrust pastry 20 cl of double cream or soy cream

2 eggs Pepper Salt Olive oil


  • Pick young nettle shoots (don't forget to wear gloves).

  • Still with the gloves, roughly cut the nettles and sauté them in 2 tablespoons of olive oil over medium heat.

  • Add the goat cheese in the preparation with salt and pepper, and cook over medium heat for 2 minutes.

  • Put the shortcrust pastry (bought or homemade) in your pie pan.

  • Sprinkle the bottom of the pie with a little bit of flour in order to prevent the quiche from becoming too runny and pour the preparation on the shortcrust pastry.

  • Beat the 2 eggs with the cream and pour the mixture over the nettles/goat cheese.

  • Bake in the oven at 210°C for approximately 30 minutes.

Serve warm with a bit of salad.

Ps: Bear in mind that too many nettles in the recipe, especially at the end of the season, can cause a slight tingling in the tongue.
