It’s the end of the month and you don’t feel like cooking. That said, your fridge is crying to be cleaned from all the food that has been sitting there for a while. Get creative in easy ways with what you find in your fridge! For instance if you also find, like me, some puff pastry that needs to be consumed, you can easily throw vegetables and cheese on it and transform it into a pizza!

Yield : 4 people

Cooking time : 45 minutes

Preparation time : 15 minutes

Ingredients in my case :

  • Puff pastry

  • Green pesto

  • Ricotta

  • Chilli paste

  • Zucchini

  • Mushrooms

  • Fontina cheese

  • Grains

  • Parsley

  • Basil

  • Parmigiano (grated)

Preparation of the pizza :

  1. Dispose the puff pastry on cooking sheet

  2. Start off with washing your veggies thoroughly.. Then dry them and cut them to the size of your liking.

  3. Spread the pesto on the pastry puff with a brush.

  4. The same way, proceed with the ricotta. Then, according to your taste, the chilli paste.

  5. Add the zucchini and mushrooms, then spread fontina cheese cubes and grains.

  6. According to your taste, season with garlic powder and sweet paprika, salt, pepper, basil and parsley.

  7. Cook in the oven for 10 minutes at 180 degrees then take the pizza out.

  8. Add the grated parmigiano.

  9. Back in the oven for about 15 minutes.
