Radish Leaf Soup

Are you also fed up with throwing away so many vegetable peels and stems but you don't know how to recycle them? Here's another useful anti-food waste trick. Use your radish leaves to make a delicious soup. They are full of earthy flavors worth enjoying! This recipe is easy to make and so easy to love!

Serves: 2


Ingredients: 200 g of radish leaves 2 potatoes 1 organic vegetable bouillon cube

1 onion 2 garlic cloves 1 tablespoon of olive oil Soy cream Pinch of Salt & pepper


Preparation:

  • Peel, cut, and boil the potatoes in salty water for 15 minutes.

  • Peel the garlic and the onion, and slice them. Brown them in a large saucepan with olive oil.

  • Add the potatoes and radish leaves. Brown the mixture for 5 minutes.

  • Add 400ml of water and the tablet of organic vegetable broth.

  • Cook for 10 minutes. Add the pinch of salt and pepper.

  • It's nearly ready to serve ! Just add a light drizzle of soy cream as well as a tablespoon of olive oil and tada, it's done !
