Seasonal Veggie Quiche

There's nothing more comforting than a yummy veggie quiche. Simple to make and delicious to eat. Success guaranteed!

Serves: 6


1 shortcrust pastry

2 leeks

3 carrots

1 small onion

3 eggs

20 cl of liquid cream or soy cream

Pepper & salt

Olive oil

A bunch of mint

Comté cheese


  • Wash and peel the carrots. Cut the dark green part of the leeks and clean the white part.

  • Finely chop the onion, the leeks, and the carrots.

  • Brown the onions in a pan with a tablespoon of olive oil, add the leeks and the carrots.

  • Once cooked, remove from heat once the veggies are cooked through.

  • In a bowl whip the eggs with the cream and the Comté cheese. Pour the veggies in the mixture. Season with the salt and pepper.

  • Add the fresh mint finely chopped.

  • Sprinkle the bottom of the pie with flour to prevent the quiche from becoming too runny. Pour the mixture on the shortcrust pastry and add a little bit of comté cheese on top.

  • Put in the oven for 30 minutes at 210 ° C.

Serve warm with a small salad. Enjoy!
