Strawberry Fluffy Cake

Diving in a fluffy dream in a bite is possible with this strawberry cake. You can easily prepare it for birthday parties on different levels, with more or less cream, but also as a simple cake for serving deli coffee to your guests.

Cooking time: 45 minutes


CAKE

Ingredients:

6 eggs

6 table spoons sugar or agave sirup

2-3 little bags of Vanilla sugar

12 tablespoons of flour

1 bag Baking power

6-8 tablespoons of cold water









Preparation:

Start by separating the white and yolks in Eggs.

  • Whisk the egg whites until they form peaks. Slowly add sugar or sirup and the 2-3 bags of Vanilla Sugar.

  • Add one by one the egg yolks, 1-2 tablespoons of flour and one tablespoon cold water. Gently mix from down up with a wooden spoon. Towards the end, add the baking powder and the rest of flour.

  • Dispose it into a 40/25cm cooking recipient on baking paper.

  • Leave to bake for 45 minutes at 180°.

CREAM

Ingredients:

250 grams of butter

2-3 bags of vanilla sugar

1 pack of Vanilla Pudding

3 tablespoons of agave sirup or sugar

300ml Milk

100ml liquid cream

Salt


Preparation:

  • Start by preparing the Vanilla pudding.

  • Dissolve vanilla pudding powder with part of cold milk and 1-2 spoons of sugar.

  • The other part of the milk is heated with a little bit of salt. When starting to boil, add the dissolved pudding.

  • Mix well and leave to heat.

  • Add liquid cream and keep on mixing for 2-3 minutes.

  • Then, take it away from heat, and regularly mix so it doesn't become hard.

  • Then start the butter cream.

  • Mix butter and vanilla sugar until it becomes foamy then add powder sugar, spoon by spoon (2-3) & keep on mixing.

  • On the side keep on mixing also the pudding until cooled.

  • Then, once the pudding is cold, incorporate it spoon by spoon in the butter cream.


FINAL:

  • Cut the cold top into 2 equal parts lengthwise;

  • Grease one side (each half) with butter cream;

  • Place the strawberries between the 2 parts with the butter cream;

  • If there are cream leftovers, you can spread it on top and decorate with sliced strawberries.
