Tomato cups filled with beef
It’s still tomato season and the range of choice is very wide; heirloom, beefsteak, plum, green, yellow, brandywine and more, this “fruit” is delicious and can be enjoyed in many ways. Imagine you get tempted at the market and purchase a bit too many tomatoes. Day after day they might lose their firmness but the taste intensifies. What can be better than cooking them as “cups” filled with beef ? With the possibility of adapting it easily to your own taste, this dish is the one you want to taste next!

Cooking time: 1 hour
Ingredients :
500gr of ground beef meat
4 large tomatoes, old variety
3 onions
2 garlic cloves
Thyme
Parsley
Butter
Pepper
Salt
Preparation :
Start by peeling and chopping the onions.
Mix the ground beef with the chopped onions and add some salt, pepper and a pinch of parsley.
Cut off the top of the tomatoes and empty them. Put the filling into the tomato cups and close them up again.
Put the rest of the onions and the fillings of the empty tomatoes on a plate.
Add the filled tomatoes to the plate, season them with thyme and butter.
Bake for 1 hour in the oven at 180 degrees.
Serve with rice or bread and of course enjoy!
