ZERO WASTE GAZPACHO
Mmmmhh check out this yummy homemade gazpacho soup !
2 organic zucchini
2 organic green peppers
1 plain of yogurt
Basil and mint leaves
A bouquet of fresh thyme
40 ml of olive oil
100 ml of water
Salt and pepper
1 fresh coconut
Fry the courgettes and onions in 3 spoons of olive oil and add the fresh thyme. Once the vegetables are golden brown, set aside and leave to cool.
Remove the seeds of the cucumber and chop it into small pieces. Do the same for the peppers.
Once the courgettes have cooled down, remove the sprigs of thyme and place the mixture in a blender with the water, the lemon juice, the remaining olive oil, the cucumber, and the peppers. Blend until the mixture is homogeneous and smooth.
Add the yogurt, the mint, the basil, the salt and pepper, and the juice of the coconut.
Correct the seasoning and blend again.
Serve in a bowl and decorated with pieces of fresh coconut and mint leaves.
