Mmmmhh check out this yummy homemade gazpacho soup !


  • 2 organic zucchini

  • 2 organic green peppers

  • 1 onion

  • 1 cucumber

  • 1/2 lemon

  • 1 plain of yogurt

  • Basil and mint leaves

  • A bouquet of fresh thyme

  • 40 ml of olive oil

  • 100 ml of water

  • Salt and pepper

  • 1 fresh coconut


  • Fry the courgettes and onions in 3 spoons of olive oil and add the fresh thyme. Once the vegetables are golden brown, set aside and leave to cool.

  • Remove the seeds of the cucumber and chop it into small pieces. Do the same for the peppers.

  • Once the courgettes have cooled down, remove the sprigs of thyme and place the mixture in a blender with the water, the lemon juice, the remaining olive oil, the cucumber, and the peppers. Blend until the mixture is homogeneous and smooth.

  • Add the yogurt, the mint, the basil, the salt and pepper, and the juice of the coconut.

  • Correct the seasoning and blend again.

  • Serve in a bowl and decorated with pieces of fresh coconut and mint leaves.
